I absolutely love this recipe, as do many of my clients, because of the sweet and savory combination. Not to mention the little kick with the cayenne. It is a great dish to get your digestion moving!- 1 cup cooked short grain brown rice
- 1/2 cup chopped Almonds
- Coconut Aminos or soy sauce
- 1 tblsp almond butter
- Spinach, sliced thinly
- Smoked salt
- 1 apple, chopped
- pinch Cayenne pepper
- 1 pinch pepper
Bring 2 cups of water to boil. Add brown rice and set to a simmer for 45 minutes. Remove from heat and let cool for 20 minutes. Put in a bowl and add apple, spinach, and almonds. Set aside. Mix soy sauce, almond butter,cayenne pepper and smoked salt. Add 1 tblsp water if create a thinner consistency, more if needed. Pour over bowl of rice mixture. Enjoy!
